Abstract:
The production method of starch sodium octenyl succinate (SSOS) was studied, and the structure of the product was analyzed by infrared spectrometer. The results showed that the substitution degree of waxy corn starch treated with octenyl succinic anhydride (OSA) was 0.017, reflected in the spectrum of 1724 cm-1 and 1565 cm-1 generated a new absorption peak, the absorption peak at 608 cm-1 is enhanced, these are the characteristic peaks of OSA group. In the preparation of low viscosity SSOS, the DE value (dextrose equivalent) of the product after esterification of starch by α-amylase was 2.5~6.4, the DE value of the product after the action of saccharifying enzyme is 14.5~37, and the amount of enzyme and whether to use saccharifying enzyme can be determined according to the DE value of the final product.Key words:

Abstract:
Based on Davies emulsification theory, the hydrophilic-lipophilic balance (HLB) value of starch sodium octenyl succinate (SSOS) was deduced, and the emulsifying and rheological properties of SSOS were studied. The results showed that the HLB values of SSOS with different substitution degrees were all greater than 10, and SSOS was a hydrophilic emulsifier, the emulsifying ability increased with the increase of DE value, but the emulsifying stability decreased. SSOS had lower viscosity at high concentration, and the viscosity decreased with the increase of shear rate.

Abstract:
The synthetic principle, synthetic methods and properties of starch sodium octenyl succinate were introduced, and the determination methods of degree of substitution and reaction efficiency of the reaction products were also discussed; the advantages and disadvantages of the application of starch sodium octenyl succinate and Arabic gum in emulsion flavor and cloud agent were compared. The application of starch sodium octenyl succinate in emulsion flavor and cloud agent was introduced.
